Holey Cheese!

Has anyone else noticed that the more holes cheese has in it the better it tastes?  Like the extra space for oxygen is like little flavor bubbles?  It probably has something to do with how the cheese is made or how long it sits to become cheesy or what not, but all I can tell you is that lacey swiss is delicious.
That's the entirety of this post.  Just needed to share my love.

But if anyone knows the answer to this mystery please let me know!

I love chees! But now I am lactose intolerant and have it only when I can't take the craving any longer!
